This is comfort food all the way delivered in a portion size that reminds one of a ski hill. The culinary team at Kaminski Bros. Chophouse suggests sharing this with at least three others, although we know there will be leftovers. We especially liked the use of Wisconsin products, like Neuske's bacon and real cheddar cheese.
Mashed Potatoes Fully Loaded
(please note this makes six orders)
25 pounds of peeled potatoes
2 pounds of butter
2 cups half & half
1 tablespoon white pepper
½ cup of salt
2 cups sautéed onions
½ pound of sour cream
Cook potatoes in steamer for 25 minutes. Melt butter with half & half and heat to 165 degrees. Working quickly, place potatoes in Hobart mixing bowl and add dry seasoning, onions, and sour cream. Mix until well blended. Add hot butter mixture a little at a time. Mix potatoes until light and fluffy.
Top each order with 1 cup of 4 year aged shredded cheddar and 8 oz chopped / cooked nuske’s bacon. Bake in oven until cheese is melted. Finish with 1 large scoop of sour cream and ½ cup of chopped scallions.
